(everything marinated for 6 months)
Step1: Marinated the ribs with red wine, lemon juice, and garlic.
Step2: Fry the mixture of garlic, shallots, onion to golden brown color with olive oil, add a Thai pepper for its scent.
Step3: Mix them well, add the ribs in.
Step4: When the ribs are 20% cook, add the Tamarind sauce, shrimp sauce, and water.
Step5: Stewing it for 1 hour, then put the potato and Jaggery.
Step6: Stew for another 20 minutes, so the potatoes are soft and soaked with the flavor, ready to serve.
